- 1 lb ground chicken
- 1 tablespoon curry powder
- 2 tablespoons chopped garlic
- 2 tablespoons chopped shallots
- 2 chopped jalapeno peppers
- 1⁄4 cup fish sauce
- 2 tablespoons palm sugar
- 3 tablespoons basil leaves
- 1⁄2 chopped bell pepper
- 1 teaspoon peppercorn
directions
- Grind the garlic, shallots, curry powder and peppercorns into a paste. Put the paste into a medium sized skillet, and stir-fry the paste until thick. Add in the chicken and the remaining ingredients and stir fry until the chicken is thoroughly cooked.
- Serve over rice.

We really enjoyed this different dish. It was simple to put together and very spicy, but in a good way. I had to use serrano peppers rather than jalapeno, as that's all they had at the store. I used brown sugar rather than palm sugar, because I *think* it's the same thing! Comments: I would use regular black pepper rather than peppercorns next time, and would advise others to do the same as that is a dominating flavor, and I didn't like that. I liked the other flavors more. Also, I'd slightly reduce the fish sauce amount next time because it was overly salty. I hate the smell of fish sauce- but the taste is lovely. Thanks for sharing this. We'll surely make it again.
