- 1⁄2 cup rice vinegar
- 1⁄2 cup peanut oil or 1/2 cup vegetable oil
- 1⁄3 cup creamy peanut butter
- 2 1⁄2 tablespoons soy sauce
- 2 1⁄2 tablespoons brown sugar, packed
- 2 tablespoons fresh ginger, minced
- 1 tablespoon fresh garlic, minced
- 1 lb coleslaw mix
- 1 (15 ounce) package broccoli slaw mix
- 6 green onions, trimmed, sliced
- 1⁄2 cup fresh cilantro, chopped
- 1⁄2 cup peanuts, chopped
directions
- Whisk together rice wine vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic; set aside.
- In a large salad bowl, toss together slaw mixes, onions, cilantro, and peanuts.
- Pour prepared dressing into salad bowl and stir to coat.
