Oven Roasted Garlic Fries

  • Pre-heat oven to 375 degrees.
  • Scrub potatoes clean -leave skin on. Slice into thirds lengthwise. Lay flat and then cut into 1/2 inch strips. Place potatoes on baking sheet; toss with the 2 tablespoons vegetable oil. Arrange in single layer.
  • Bake for about 45 minutes or until tender and slightly golden.
  • While fries are baking; mix together the garlic, parsley salt, pepper, and olive oil.
  • Remove fries from oven and place in a large bowl.
  • Add the garlic mixture and toss, coating all the fries.

  4. These are very good oven fries and take no time at all to put together. I forgot to set the timer so my fries were a bit overdone but still very tasty. Used dried parsley but next time will use fresh. Everyone should give these a try! Made and reviewed for Pick A Chef Spring 2010,
     
  5. *drooool* Agreed with other reviewers, this deserves at least ten stars! Mine looked exactly like the pic, too. I followed I'mPat's suggestion and put them back in to bake about 8 min. with the garlic mixture. I halved the salt and only used 1 Tbsp oil in the first step (as I have a good new nonstick sheet). Think I will be more generous with the parsley next time, too. The family gobbled these up- me included! Thanks so much!

Tweaks

  1. Delicious. My only 'tweak' was to use olive oil instead of vegetable. The garlic would just drop off, chopped, so I suggest mashing it with the salt, into a puree to get a better coating. Very nicely flavoured and crispy, without all the calories of deep-frying.
