  • Preheat oven to 500°F.
  • Coarsely chop potatoes and place on nonstick baking sheet.
  • Toss with oil, peppers, onions and seasonings.
  • Roast in oven for 25 minutes, turning twice with spatula.

  1. Made it for a family brunch and everyone loved it. Put in the oven in a 13x9 Pyrex, covered in foil, same oven as the 8lb ham - 2hours at 275F. Uncovered and cooked 15 min longer at 400 to crisp up the top layer. Used a red bell pepper instead of green. Will definitely make again, thanks!

  5. I would give this two to three stars. The taste was great, but I had difficulty cooking the potatoes. I tried to do two at a time, so perhaps that caused the issue. The remaining trays I cooked it for about 30 minutes at 425 and then finished under a high broiler to crisp them up. Perhaps I will try again with the recipe verbatim and then see how it goes. I tried to changing the recipe by 4x the recipe.
