Great to top pies, tarts, cakes, etc. Adapted from Better Homes and Gardens magazine. You can do this with limes and oranges too.

ingredients

  • 2 small lemons (or limes or oranges, tangerines, grapefruit, etc.)
  • 14 cup sugar

directions

  • Preheat oven to 275*F.
  • Liine a 15x10x1" baking pan with parchment paper(or wax paper).
  • Cut 2 small lemons crosswise into 1/8-1/4 inch thick slices.
  • Arrange in a single layer on pan.
  • Sprinkle lemon slices with 1/4 cup sugar.
  • Bake in at 275*F. 45-50 minutes or until lemons are almost dry and covered with a sugary glaze. While still warm, loosen slices from paper to prevent sticking.

    The lemon slices were dry and bitter. The middle was still juicy but very bitter and the peel was very tough and hard to chew. I would not recomend this recipe.

    I'd like to make these ahead to use as drink garnishes at a large event, does anyone know if they keep well or how long they last?

    I first tried a different recipe that called for boiling the lemon slices, but they came out rubbery and extremely bitter. So I tried this instead and I love the results. They look like little stained glass lemon slices. They were sour but not bitter and the rind was chewy and delicious!
