Our Canada Meatballs (Not Your Average Meatballs)

- 1 egg
- 1 (1 1/2 ounce) envelope onion soup mix
- 1 lb ground beef
- 2 tablespoons all-purpose flour
- 2 tablespoons milk
- 1 cup cheddar cheese, shredded
- 4 slices bacon, cooked crispy and crumbled (like bacon bits almost)

COATING
- 2 eggs
- 1 cup crushed salted cracker
- 5 tablespoons vegetable oil
directions
- In a bowl, combine egg and soup mix.
- Crumble beef into mixture and mix well.
- Divide into 36 portions; set aside.
- In a bowl, combine the flour and milk until smooth. Add cheese and bacon; mix well.
- Shape cheese mixture into 36 balls.
- Shape one beef portion around each cheese ball.
- In a shallow bowl, beat the eggs.
- Place cracker crumbs in another bowl.
- Dip meatballs into egg, then coat with crumbs.
- In a large skillet (we used an electric frying pan) cook meatballs in oil for about 15 minutes, turning to brown on all sides, or until the meat is no longer pink and coating is brown.
- Cook and prep time is aproximate.

Well worth the effort! Made most with Cheese Ritz, but a few with saltines as well, liked the Ritz better. Pan fried them in a bit of EVOO and they were crispy on the outside, cheesy and yummy on the inside. Freezing and pan frying from frozen, works great. Next time, will add Jalapeno to the cheese center!

mmm tasty. I baked the bacon until it could be crumbled to dust and combined with strong cheddar and parmesan. I used the suggestion made by another commenter of using cheese ritz for the coating but double-dipped them, that is put back in the egg and then back in the crumb after the first dip. This gives a thick coating like scotch eggs. I fried to brown then baked while I prepared a sauce of roasted red and yellow capsicum, roasted red onion, spring onion and a little garlic. this was stir-fried then added to sieved tomatoes and chopped basil and any other herbs you like. Yum!

I wish there were more than 5 stars to rate this recipe. I made several substitutions to cut calories: ground turkey instead of ground beef, turkey bacon instead of regular, and I completely omitted the oil. I baked them in the oven at 400 for 30 minutes instead. I used Parmesan cheese b/c we were low on Cheddar. I had no problems at all with consistency. I did decide that one egg for the coating would be enough, probably b/c I made them dinner sized and only had 14. What a fabulous recipe! I'll definitely be making it again and passing it on. Well worth the effort!
