Oriental Chicken Salad

Oriental Chicken Salad created by Tinkerbell

Found this in my Betty Crocker cookbook and it has become a favorite in my family as a main dish. Quick to put together, and most of the ingredients are always on hand. I've also substituted turkey for the chicken with no noticeable difference. The original recipe calls for 1/2 head of iceberg lettuce, I prefer the romaine.

  • Combine first five ingredients in a large bowl.
  • Shake the rest of ingredients except chow mein noodles together.
  • Pour dressing over salad.
  • Serve with chow mein noodles.

    This recipe was quick, easy & light. Perfect for summer evenings! I used iceberg lettuce (just what I had on hand) but agree that romaine would be preferable. Everyone enjoyed the dressing, as it wasn't too sweet, but instead had a nice balance to it. We do have a tendency toward spicier foods so next time I will sub some of the vegetable oil with sesame oil & hot chili oil. This is a great go-to recipe. Thanks for sharing, rhondalynne! You were adopted during Fall 2009 Pick A Chef!

    I can't believe I am the first to rate this. Everyone cleaned their plate. I used a rotisserie chicken from the grocery store and I used the whole thing minus the leg and wing I ate when I got home from the store. I had to make sure the chicken tasted good before I feed it to my family. That's my story and I'm sticking to it. Loved the dressing. I served this with spring rolls, very nice and filling dinner. I have just enough leftover for tommorrow's lunch. Thanks for a real keeper rhondalynne!
