Orange Thyme Chicken

• Ready In: 1hr
• Ingredients: 5
• Serves: 2

ingredients

• 4 chicken drumsticks
• 1 garlic clove, crushed
• 2 tablespoons chopped thyme
• 2 tablespoons orange juice
• 1⁄2 cup breakfast marmalade

directions

1. Heat oven to 180 C.
2. Combine all ingredients but chicken in a saucepan.
3. Stir over low heat until melted and well combined.
4. Cool slightly then add chicken.
5. Toss to coat then chill for 15 minutes.
6. Place 1 cup of water in a roasting pan.
7. Position wire rack over pan.
8. Place chicken on rack, bake 35 minutes.
9. Brush every 10 minutes with reserved marinade.

Excellent chicken, we loved the flavour in this. I made as directed, but finished the drumsticks off on the BBQ to give them a "blackened" look. Thumbs up from my whole family, thanks for posting! Made for ZWT 8 Spain :)

This was a wonderful recipe. Loved the thyme and orange together. I used skinless/bone-in breasts. Obviously, it will take longer to bake than the specified drumsticks.
