Orange Sponge Cake

This is from my grandmother's recipe box given to me over 20 years ago. Most of the recipes are VERY OLD and the directions show it, but she was an excellent cook, so they are worth figuring out!

ingredients
- 3 eggs
- 1 cup sugar
- 1 1⁄3 cups orange juice
- grated rind from 1 orange
- 1 cup flour
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
directions
- Beat egg whites until stiff, then add yolks one at a time, beating between each addition.
- Add sugar, rind and juice.
- Combine flour, powder and salt and fold into juice mixture.
- Bake in a shallow pan long and slowly (at 300-325 degrees and start checking for doneness at 35 minutes)

I usually make cakes from online when I can't reach my Sis because she is a professional baker .. My cakes usually comes out great except now .. I made this and as much everyone said it came out good .. Mines didn't I had to throw it in the trash .. It was raw n sifted flour didn't dissolve .. It looked n smelled beautiful but when it came out a complete disaster .. I made carrot cake the same time as this that came out beautiful ..Reply

I made this for Father's Day and everyone loved it! Sponge cakes are always easy to make and I'm a beginner in baking. The taste of natural orange is evident in the cake but i did reduce the sugar to 3/4 cup and i added 2 tablespoons of honey instead because my family loves natural flavors without anything too sweet. It's a matter of preference but this recipe is definitely a keeper :) I might add vanilla essence the next time i bake this, thanks karen!Reply
