Orange Soda Chicken

- 4 -6 boneless skinless chicken breasts
- brown sugar
- orange soda
- cornstarch, mixed with water
directions
- Slice halfway through each breast or thigh 3 to 5 times (season with salt and pepper if desired).
- Rub a little brown sugar on each piece and place in a 9 x13" pan.
- Bake 20 minutes at 350 degrees. Pour orange soda over chicken just to cover then bake an additional 30 minutes.
- Remove chicken and thicken sauce with cornstarch and water. Serve chicken with sauce on top.

This was a great way to prepare chicken! Our chicken came out very moist and had a nice orange flavor. I do think I may have added a bit too much cornstarch to the sauce to thicken it, but it still turned out pretty good. It was a bit hard to judge how much of everything to use since it wasn't stated in the recipe. I put a liberal amount of the brown sugar on it, and I used 1 mini can of orange soda which almost covered the chicken so I just basted it a few times while cooking. I did end up just putting the sauce in a saucepan and heating it to allow the cornstarch to thicken it up. The chicken also had a nice orange color to it, very pretty to look at. And the sauce looked fantastic on top! We paired this with a teriyaki noodle side and it was the perfect match! Thanks for a great recipe!

My husband and I are retired and travel quite a lot. We have a place in Boise, Idaho and now a part-time home in Carlsbad, California. It's nice to be in California where they have so much more fresh food...vegetables and fish! They have so many farmer markets that I really have to watch myself, but cooking is so much fun and they have such a variety of things to use.</p>
<p>I have two daughters and one has three kids...my angels (the twins who are now 4) and my man who is 2 and just as big as the twins. I do miss them when we are gone...they grow so fast.<br /><br />I love to collect and read cookbooks -- way to much from my husbands point of view. I love to watch Rachael Ray, Paula Deen, Barefoot Contessa and Everyday Italian.
