Orange Parfait (A La Bridget Jones) - Not Marmalade!

ingredients
- 1 (3 1/2 ounce) package vanilla pudding mix or (3 1/2 ounce) package vegetarian vanilla pudding mix
- 1 3⁄4 cups orange juice
- 1 cup low-fat vanilla yogurt
- 2 tablespoons orange zest (remember her trying to figure out how to grate zest?)
- 1⁄4 cup crushed ginger snaps
- fresh berries (to garnish) (optional)
directions
- In a medium sauce pan, combine the pudding mix and orange juice.
- Cook over medium heat, stirring constantly until the mixture comes to a full boil.
- Remove from heat and place in the refrigerator until completely chilled.
- In a large bowl, combine the chilled pudding, orange zest, and low-fat yogurt.
- Place a spoonful of the mixture into a parfait glass OR Sugar Cage (see recipe #83770).
- Sprinkle 2 Tablespoons of crushed cookies on top and continue layering the pudding and cookies until the sugar cage is full.
- Garnish with fresh berries and serve.

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper)
I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke)
On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
