Orange Icing

"A tasty icing for a chocolate cake such as recipe #31804 #31804, or Kittencal's recipe #116990 #116990, or my recipe #147447 #147447. Enough to frost a two-layer cake. Posted in response to a request. To make an orange cake, use a white cake mix, use orange juice instead of the water called for in the package directions, and add some orange zest. Sprinkle top of iced cake with additional orange zest, or chocolate shavings, chocolate sprinkles, or chocolate drizzle."

• Yields: 2-4 cups

• 1⁄3 cup butter, softened
• 1 1⁄2 tablespoons orange zest
• 1⁄4 teaspoon salt
• 3 1⁄2 cups icing sugar, sifted
• 1 tablespoon orange juice (or more)
• 1 teaspoon lemon juice

directions

1. Cream the butter.
2. Add grated orange zest and salt.
3. Add icing sugar alternately with orange juice and lemon juice. You can put the sifter right over the bowl while adding the icing sugar.
4. Beat well after each addition.
5. Add a little more orange juice if required.
6. Beat until creamy and easy to spread.

I had just made a banana cake and needed an icing for it as the cream cheese frosting for our family is not to our taste. I wanted a citrus icing and when I saw this it just screamed make me! So I did tonight what a beautiful texture as I like my icing thick and very creamy and that's exactly what I got with this recipe it just mixed up beautifully! The taste is awesome I was surprised as I used allot of lemon zest and lemon juice no orange juice but it did not become overwhelmed with the lemon just perfect. foodtvfan thank you, for sharing this incredible recipe this is one I will make for years to come!

I made this icing to put on top of mini chocolate cupcakes. I too had to use extra OJ to get the consistency I wanted. I ended up with something like 2 cups of icing, definitely not 4 cups. I don't know if that is because I didn't whip the butter enough before adding the other ingredients. The icing is tinted a pale yellow so I added one drop of red food coloring to tint it to orange. After it sat for awhile the flavor became more pronounced. Overall a good recipe. Thanks!

Wow, this is REALLY GOOD! This is one of those no-brainer recipes that should have occurred to me a long time ago. Thank you so much FoodTVFan, this will be a permanent keeper in our house! I put it on Kittencal's Orange Snacking Cake too.

I made this icing to go on top of Kittencal's recipe #116990. This icing is fantastic! It has the most wonderful orange flavor~so fresh. The icing didn't have the spreading consistency that I wanted with only the 1 T of o.j. and 1 t of lemon juice. I don't know how much more orange juice I added, because I did it a little at at time~probably a good 1 - 2 T more. This is an icing I will be making again for sure. It's a nice change of pace from the ordinary chocolate cake/icing combo! Thanks so much, foodtvfan.
