  • FOR THE PANCAKES

  • 1 egg, beaten
  • 1 cup light cream
  • 14 cup frozen orange juice concentrate, thawed
  • 1 cup pancake mix
  • FOR THE SAUCE

  • 12 cup butter
  • 1 cup granulated sugar
  • 12 cup frozen orange juice concentrate, thawed
  • 1 tablespoon orange zest

directions

  • FOR THE PANCAKES, Combine egg, cream & 1/4 cup orange juice concentrate.
  • Add pancake mix, stirring to remove most lumps.
  • Bake on hot greased griddle.
  • FOR THE SAUCE, in a saucepan, mix butter, sugar, 1/2 cup orange juice concentrate & zest.
  • Heat to boiling, stirring occasionally.

  1. These are great for breakfast too!!! I made 1/2 of the recipe for the pancakes and 1/4 of the syrup for breakfast. It made 9 medium pancakes and the syrup is very sweet, so very little needed with the orange sweetened cakes. Thanks for sharing your recipe. Made for Stars Tag.
     
  2. These are delicious! Had this for brunch and they sure were light and fluffy and orange-y. The batter's a bit thick so I find myself spreading it on the griddle with the back of the wooden spoon. I cut back the sugar into half when I made the sauce since I'm watching my sugar and microwaved it mixing it every now and then (oops, lazy me). I would have followed it to a T but better safe than sorry. Simply a health preference. Anyway, they still came out sweet, tasty and recommended for any type of pancakes who'd want to try a different flavor for a change. Thanks for posting this, Sydney Mike!
     
  3. Wow! I love this recipe, and it's not just for dessert! I made this for breakfast, using corn muffin mix to make cornmeal pancakes which worked well with the tangy orange sauce. This is full of flavor, and I will make these again. Thanks for posting!
     
  4. I did only the pancakes. DH ate them with maple syrup. I ate them alone like that. I liked the taste as is. I used 1/2 cup of half and half cream and 1/2 cup of whole milk. It was fine. I don't understand how we can have 18 pancakes with this recipe cause I got only 6 LOL Thanks Syd. Made for 123 hit wonders.

I am VERY sorry that I did not have all the ingredients to hand; well one ingredient - NO frozen orange concentrate, so I used normal juice instead. My topping was made with ORANGE BLOSSOM honey instead of the sugar, and although it was thinner than Baby Kato's photo, the taste was DIVINE! I added the zest and some more juice to it. These pancakes came out fluffy and light with a REAL citrus zing! Made for Aussie/NZ Recipe Swap #16 and already requested again! THANKS! FT:-)
