Orange Chess Bars

  • CRUST

  • 19 14 ounces orange cake mix
  • 12 cup vegetable oil
  • 13 cup pecans
  • TOPPING

  • 16 ounces powdered sugar
  • 8 ounces cream cheese, softened
  • 2 large eggs
  • 2 teaspoons orange rind, grated

  • Preheat oven to 350*.
  • Grease 13x9 pan.set aside.
  • FOR CRUST:.
  • combine cake mix, oil and pecans in large bowl.
  • Stir until blended.(mixture will be crumbly).
  • Press into bottom of pan.
  • FOR TOPPING:.
  • combine powdered sugar and cream cheese in large bowl,.
  • Beat at low speed with electric mixer until blended.
  • Add eggs, and orange peel.
  • Beat at low speed until blended.
  • Pour over crust.
  • Bake at 350* for 30-35 minutes or until topping is set.
  • Cool.
  • Refrigerate until ready to serve.Cut into bars.

I love cooking, and reading Christian fiction..I have 5 grandchildren..4 boys and 1 spoiled granddaughter...I also have a black cocker spaniel named Tobey..who is very spoiled..Love computer games, cross stitch and reading cookbooks..I was diagnosed with Acute Myeloid Leukemia almost a year ago, on September 26, 2005....was in an out of the hospital for 8 months, doing intensive chemo...I am doing well now, thanks for all the prayers...
