From http://friendsofdenmark.org. Posted for ZWT6. To make smorrebrod, cut crusts from slices of pumpernickel or rye bread, but not French bread, when using them for a base. Be careful to spread soft butter entirely over the piece of bread you use. This keeps moist ingredients from seeping through and making the bread soggy. Ingredients should be artfully arranged. Sandwith will be eaten with a knife and fork.

  • Spread 1 teaspoon butter on each slice of bread, being sure to cover each completely.
  • Cut each buttered slice in half crosswise or into 2 (4-by-2-inch) pieces.
  • Top each piece of bread with one-eighth of the herring, placing the fish smooth-side up.
  • Top each with several onion rings and 1 tomato wedge.
  • Garnish with watercress or parsley.

    There are so many wonderful reviews for this recipe that mine is due to personal taste. I do like herring, but I wasn't crazy about this flavor profile. It may be the type of herring in marinade that I bought. It does look beautiful and makes for a pretty presentation! Thank you.

    This is a delicious sandwich! I used a soft deli pumpernickel, which I cut out into rounds and slathered LOTS of butter on! The herring was rich and creamy - so fatty! So delicious... I think it helped that we had a beautifully ripe homegrown tomato that was full of flavor as well, and used red onion out of personal taste. Used a lemon to squeeze over the fish, which gave it a huge pop of flavor and contrast! Like another reviewer, I chose to put the tomato slice on the bottom, so I could see the beautiful herring! Thanks for posting a keeper of a recipe! Made for CQ4.
