  • Heat a skillet over medium heat and add the olive oil.
  • Fry the egg to desired temperature and remove from skillet.
  • Microwave the black beans, salt and cumin in a bowl for one minute.
  • Remove the bowl from the microwave and add the greens on top.
  • Put a lid on the bowl to steam the greens. Remove and add the egg on top.

  1. Hard boil several eggs. Chop one up and add it to this dish instead of the fried egg.
