DIRECTIONS

  • Heat a skillet over medium heat and add the olive oil.
  • Fry the egg to desired temperature and remove from skillet.
  • Microwave the black beans, salt and cumin in a bowl for one minute.
  • Remove the bowl from the microwave and add the greens on top.
  • Put a lid on the bowl to steam the greens. Remove and add the egg on top.
