- 1 tablespoon olive oil
- 1 egg
- 1 cup black beans
- 1 cup spinach or 1 cup swiss chard
- salt
- cumin
directions
- Heat a skillet over medium heat and add the olive oil.
- Fry the egg to desired temperature and remove from skillet.
- Microwave the black beans, salt and cumin in a bowl for one minute.
- Remove the bowl from the microwave and add the greens on top.
- Put a lid on the bowl to steam the greens. Remove and add the egg on top.
