Old-Fashioned Potato Salad Adapted from a Recipe Courtesy of Bob

- 3 lbs russet potatoes, whole
- 2 teaspoons kosher salt, plus more for cooking the potatoes
- 1⁄2 cup mayonnaise
- 1⁄3 cup dill relish
- 6 large eggs, hard boiled and diced
- 3 celery ribs, diced
- 3 tablespoons prepared mustard (yellow or spicy brown)
- fresh ground black pepper
directions
- Put potatoes in a large pot of water and season with salt.
- Bring to a boil and cook until fork tender, about 25 minutes.
- Drain and let potatoes cool. Peel once cooled.
- Dice, crumbled or mash the potatoes in a large bowl.
- Stir in the mayonnaise, relish, eggs, celery, mustard, 2 tsp salt, and pepper to taste.
- Serve immediately or refrigerate until serving time (I picked "serve immediately).

This is pretty much the same recipe that my mom, grandmother and I have been making for years. Like the previous poster, we add a little chopped onion. We only use Duke's Mayonnaise! A few tips: If you don't have celery, you can sub celery seeds but only add a little at a time, blend well and then taste after each addition. Also, we always boil our eggs along with the potatoes and remove them with a large slotted spoon before draining the potatoes. Less pots to wash, lol.

Same salad my mother made for yrs & yrs. Delicious every time. If you use russet potatoes just mixing it will mash some of the potatoes. We never mashed. But...we did use Miracle Whip. We all think it's tastier than straight mayo but to each his own. It certainly is a delicious salad. Adding shredded carrots is good too.
