Old-Fashioned Pineapple Cookies

- 1⁄2 cup shortening
- 1⁄2 cup brown sugar
- 1⁄2 cup white sugar
- 1 egg, beaten
- 2 cups flour
- 2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1 cup crushed pineapple, drained
- 2⁄3 cup chopped walnuts
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon vanilla
directions
- Preheat oven to 350.
- Cream shortening and sugars together.
- Add egg and mix well.
- Add dry ingredients and mix well Add drained pineapple and mix well.
- Add nuts and flavoring, mix well (yes, again).
- Drop by spoonful onto greased baking sheet.
- Bake for 15-20 minutes.

These are so good, kathie! I had a couple of cans of pineapple that I needed to get rid of so I made a double batch. Since I also had a bit of unsweetened coconut to use up, I toasted 1/2 cup coconut to throw in one of the batches, with the walnut/vanilla step. The Beau, aka Mr. Picky Eater, has been gobbling these up too! Thank you!
