Old Faithful

This is an old, faithful family recipe from my mom and her mom and yes, "Old Faithful" is what they actually called it. It's a very easy, flexible, one-dish meal. Dry onion soup mix can be used instead of the Knorr Vegetable soup mix, water and the canned tomato juice instead of broth, chicken instead of pork chops, brown rice instead of white, Rotel tomatoes if you want a little heat, skip the tomatoes all together etc. Have fun trying it in all its forms and ENJOY!

ingredients
- 1 cup uncle ben's converted white rice, uncooked
- 1 (1 1/2 ounce) package Knorr vegetable soup mix
- 1 (14 ounce) can low sodium chicken broth or (14 ounce) can vegetable broth
- 4 (4 -6 ounce) pork chops
- 1 medium yellow onions or 1 medium red onion, sliced into rings
- 1 medium green pepper, sliced into rings
- 1 (14 ounce) can diced tomatoes
directions
- Preheat oven to 350.
- Drain tomatoes, reserving enough of the liquid to bring the broth to 2 cups.
- Add rice, soup mix and broth to bottom of 12x12 baking dish, stir to combine and evenly distribute in the baking dish.
- Place pork chops on top of rice mixture.
- Top each pork chop with a ring of onion and a ring of green pepper. Fill each ring with diced tomatoes.
- Cover and bake for 65-70 minutes or until meat is cooked through and liquid absorbed into the rice.

Very similar to a dish my mom made when I was a kid. I was actually trying to find THAT recipe when I came across this one! Even though I actually liked this recipe better than "mom's" I was on a mission for nostalgia's sake. I did find her recipe which was from a 50 year old Peg Bracken cookbook called "I hate to cook cookbook" Her version called for 6 T raw rice, One can chicken broth , 3 sliced tomatoes , 1 sliced onion, and 1/2 sliced green pepper. I will be making your version from now on! Thanks for sharing!Reply

This was a very good recipe, easy to make and quite flavorful. I followed the recipe as stated, only thing I might do next time is use regular rice that I already had, I used the Uncle Ben's rice recommended and it was very pricey and I think this will work fine with any type of rice.
