- Peel and grate yams, squeeze out any excess water; add egg, flour, onion and cilantro; season with salt and pepper.
- Heat about 1 " of oil in skillet; Drop yam mixture by large spoonfuls into hot oil; cook 3-4 minute on each side or until golden brown.
