In a large bowl, preferably one with a handle and a pouring spout, mix together the first four ingredients. I use a whisk.
In a separate, smaller bowl, again with a handle and a pouring spout if it's available, beat the two eggs into the milk or milk and water combination, then add and mix in the melted shortening, bacon drippings or vegetable oil.
Pour the wet ingredients into the dry ingredients and mix with a firm whisk, just until combined. Mixture will be lumpy.
Pour onto heated nonstick waffle iron or griddle. Serve hot, or re-heat leftover waffles in a toaster.
