ingredients
- 1 cup butter or 1 cup margarine
- 1 cup sugar
- 1⁄2 cup brown sugar
- 1 egg (beaten)
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 1⁄2 cups flour
- 1 teaspoon vanilla
- 1 1⁄2 cups quick oats
- 3⁄4 cup pecans (finely chopped)
directions
- Cream together butter, sugar, and brown sugar.
- Mix in egg.
- Mix in baking soda, cinnamon, and flour.
- Stir in vanilla.
- Blend in oats and nuts.
- Roll into walnut sized balls (about 1 inch).
- Chill at least 1 hour.
- Place balls on greased cookie sheet and press flat with glass buttered and dipped in sugar.
- Bake at 350 for 10 minutes.
- I'm not sure how many this makes, but it always seems to be a lot!

These were very good. I don't put cinnamon in my oatmeal cookies but I like the way these turned out. I didn't butter the glass, I sprayed it with oil and I also mixed cinnamon with the sugar. Next time I think I'll add some nutmeg too. Mine turned out crunchy this time. Thanks for posting I'll be making this again.
