Oatmeal Orange Muffins

"I love the orange flavor of these, different for a muffin. Yummy! I got this recipe from an old (1980's) Canandian cookbook called "Muffin Mania". I usually double or triple the recipe and freeze the extras.(Prep time includes soaking time.)"

  1. I didn’t have brown sugar so substituted with more white. I added a bit of cinnamon and flax meal to it, too. I topped them with orange zest. I used fresh squeezed oranges for the juice. They turned out light and fluffy and were the perfect after school snack with butter and a slice of cheese!
  2. Absolutely delicious! Fragrant, moist and full of flavor. A new family favorite. I have now made these 3 times and they are gone within a day with a request for more each time. Easy to make with everyday ingredients. Thank you!
  3. These muffins were quick and easy to make and smelled great while cooking. I didn't have any old fashioned oats, so I used packets of plain instant oatmeal instead and they turned out just fine. They were absolutely delicious when warm from the oven and had lots of flavor. I will definately make these again.
  4. Everyone loved these muffins. They have such a nice orange flavor. I added some chocolate chips along with the raisins which my kids loved. I think next time I won't fill my muffin cups quite as full though, the batter cooked over a bit. Will definitely make again.

Hi! My husband, four children and I live in NY. I think my love of cooking and eating?is in my blood. My Grandma (who was 100% Norweigan) was a wonderful cook and my mom & sisters are as well. I really enjoy baking the most. If I had some time off I would bake and look for more new recipes to try!
