Oatmeal Apple Muffins

"These are simple and healthy muffins made from ingredients I always have around the house. I enjoy adding about 1/2 cup Craisins, but I bet they'd be good with other fruits or nuts thrown in, too. This recipe is from the Big Locust Farm Bed and Breakfast in Paoli, Indiana."

  • Preheat oven to 400 degrees.
  • Combine oatmeal, flour, cinnamon, baking powder and baking soda.
  • Add applesauce, milk, brown sugar, oil and egg; mix until moistened.
  • Put in muffin cups.
  • Bake 20 minutes.

  1. These were very tasty, but seem to be missing a little something. I think maybe some walnuts or raisins would do the trick...maybe even cranberries. But, this is a good basic muffin recipe. My only suggestion, other than the above, would be to add the brown sugar with the dry ingredients, because I think I had to mix a little too long to incorporate it when added with the wet, and we know what happens to overmixed muffins! Thanks for posting...I will make again with added ingredients. VERY EASY!

  3. i like these, true , they do taste like somethings missing, i am tempted to add chocolate chips next time, but that just me because i think everyhting needs chocolate, but i was trying to go healthy and these are good choice for my family when i had all the ingredients handy. oh, and i had no applesauce on hand so i boiled some apples with some cinamin and blended it up and made my own yummy!! and more moist!
     
  4. These muffins are delicious! I added 1/2 cup of chopped apples and some chopped pecans. I took Karen's advice and added the brown sugar to the dry mix. I am going to be using this recipe again. Thanks for sharing Kree!
