Oatmeal and Banana Cookies

ingredients
- 1 2⁄3 cups whole wheat flour, I use freshly ground
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 1⁄4 cups old fashioned oats
- 1⁄4 cup brown sugar
- 1⁄4 cup sugar
- 3⁄4 cup butter, softened
- 2 large eggs, beaten
- 1 teaspoon vanilla
- 2 ripe bananas
- 1 cup peanut butter chips
- 1 cup chocolate chips
directions
- Mix all but the chocolate and peanut butter chips.
- Add in chocolate chips.
- Bake at 350 for 12-15 minutes.

These are really yummy cookies! Lots of chips, and a hint of banana flavor in a tender oatmeal cookie. My kids all loved these, and they often reject whole wheat in their cookies. A great thing to do with leftover bananas which I'm always trying to get rid of. In typical cookie fashion, I mixed the butter, then creamed with the sugars. Added eggs, vanilla, and bananas. Mixed in a combination of flour, soda, and salt, then stirred in oats and chips. These don't spread a great deal, so I'd suggest flattening out a bit with the back of a spoon before baking. I'll make these again. Thanks for sharing the recipe!
