No Peek Stew

ingredients
- 2 lbs stew meat
- 4 large potatoes, cubed
- 8 carrots, cut
- 1 onion, chopped
- 1 green pepper, chopped
- 1 slice dry bread, crumbled
- 1 (28 ounce) can stewed tomatoes
- 1 tablespoon salt
- 1 tablespoon sugar
- 3 tablespoons instant tapioca pudding mix
directions
- Mix all and put in a large casserole dish or Dutch oven.
- Cover slightly.
- Bake at 250 for 5 hours.
- DO NOT UNCOVER!

I love this stew, easy simple, hearty and delicious. I have also fixed this in my slow cooker on low. I use the crock pot liners to help make clean-up a snap. Goes great with homemade yeast rolls.
