  • Rinse and trim the artichoke, cutting the stem off straight so that the artichoke can stand up on it's own without tipping over.
  • Spread artichoke petals open as far as possible without snapping.
  • Between the petals: squeeze lemon juice, drizzle olive oil and broth and stuff garlic. Sprinkle the top of the artichoke with sea salt.
  • Tightly double wrap and seal the artichoke with heavy-duty aluminum foil.
  • Place artichoke, making sure that it is standing up straight so the liquid doesn't come out (I put them packed together in a baking dish) in a pre-heated 425 oven and bake (medium-sized for 60 minutes, large for 90 minutes).
  • Remove from oven and remove wrapping.

  1. Can this be "baked" in a Slow Cooker and if so how long should it be cooked on low setting or on hi setting?
     
  2. Did you also take out the center fuzz before cooking?

  1. This was the first time I've cooked an artichoke, so I was a bit scared when I unwrapped it and saw it was ......well, kind of brown. I thought I'd overcooked it, and maybe I did. I cooked for 67 minutes. Regardless of what it looked like, it tasted phenomenal! Because of the garlic (bonus...roasted garlic with this recipe!) and olive oil, there is really no need to dip the petals in butter or other fattening sauces. I absolutely loved this and will definitely do this again....so easy to make, and soooo delicious!
     
  2. This was the first time I've ever "baked" an artichoke and it was so much easier and taste so much better than boiling. Everyone raved about it and this will be the way I make them from no on. All the spices stayed right on and added to the wonderful flavor. My chokes were pretty big so I baked for 90 minutes and they came out perfect. Thanks so much for posting this awesome recipe
     
  3. We love artichokes and did enjoy them prepared this way. The flavors are wonderful; roasting the garlic in the artichoke is very tasty. These artichokes were made as written only cooking 60 minutes and it looked over cooked and was falling apart tender. Thank for the post.
