No-Fat Banana Applesauce Muffins

"I got this recipe out of a Gooseberry Patch cookbook and it is one of my stand-by recipes when I am watching my calories and fat. Since I am doing just that right now, thought I would put it on the zaar for easy access and hopefully someone else likes this recipe as good as I do. (I prefer to sub 3/4 of the white flour for whole wheat and use brown sugar instead of granulated sugar. I think fresh nutmeg is the key in this!)"

  • Preheat oven to 350 degrees.
  • Spray a 12-cup muffin pan with non-stick cooking spray.
  • Combine the dry ingredients and mix well. In a separate bowl, mix all the wet ingredients. Add together and mix well.
  • Pour into muffin tin.
  • Bake for 15 - 20 minutes. (My oven baked right around 17 minutes.).
  • (Per muffin: 116 calories, no fat).

    These were so good. I added some vanilla, mini chocolate chips and used egg whites. They came out so moist and fluffy. It also added a crumble mixture of 1/4 cup of Brown sugar, 2 tbsp flour and 1 tbsp of butter to the top of the muffins before baking. Delicious!!

    I made these muffins but used 1 Cup of WW flour, 3/4 C. Quick cook oats The sugar I used was all Brown Sugar added 1/2 C. Choco chips added 1tsp of Vanilla. And they turned out DELICIOUS!! They took an additional 4 mins in the oven so my total bake time was 19 mins. I just ate 3, and don't feel guilty at all!

    These are fabulous. I used pumpkin pie spice mix + 1/4 tsp of cinnamon instead of the nutmeg and also swapped out sugar for brown sugar. Definitely making them again!!!

    I haven't made these as written, but based on two small changes I made to the recipe these muffins are really, really good. Instead of using a 1/2 cup of sugar I used a 1/2 cup of raw honey, and I added about 1/3 cup of chopped walnuts. No fat, no processed sugar.

    I made these for me and my roommates and we loved them! Instead of having a cup of sugar just use a cup of unsweetened applesauce and added fresh blueberries and raspberries. Also I used only one cup of gluten free flour mix and 3/4 cup oats to add a different texture! I hope you enjoy
