directions

  • Spray 10 mini loaf pans with vegetable oil cooking spray.
  • In a 2-quart saucepan, heat the milk and marshmallow together over low heat.
  • Stir constantly, because condensed milk scorches easily, until the marshmallows are melted.
  • Remove the mixture from the heat.
  • Combine the cracker crumbs, pecans, coconut, dates and cherries in a large bowl.
  • Add the bourbon to the milk mixture and pour over the crumb mixture.
  • Mix well with your hands.
  • Scoop the mixture into the prepared pans and press down firmly to mold into shape.
  • Refrigerate for 2 days.

Questions & Replies

  1. Can I substitute something nonalcoholic for the bourbon? I hate to buy a whole bottle just for that. I don't drink soda either,

Reviews

  1. I see in the reviews of others that it was all white or too moist or too sweet. I didn't have a single problem and I messed up nearly every ingredient! LOL I used 12 oz of marshmallows instead of 16 oz, I used 14 oz of graham crackers instead of 16 oz, I used two cups of coconut instead of 1 1/2 cups. I added in a cup or so of raisins and used Crown Royal instead of bourbon. I just finished the recipe. It's messy and it's good! The only trouble I'm going to have is letting it sit for two days! I, also, didn't make mini bread pans. I used a big Tupperware bowl and pressed it in well. Plus, I didn't butter the Tupperware bowl! It's gonna be delicious I just know it!

  2. I went exactly like the recipe said and it is awful, too sweet and moist. How can I correct it as I spent a lot of money on ingredients.

  3. what's the green stuff in the fruitcake???

  4. I made this for the first time and it looks white? I assume from the milk and marshmallows. But will it darken over time in the fridge?

  5. Very like a fruit cake but no flour or cooking here, but made with marshmallow! Like it, especially the bourbon in it!
