  • Heat oil in a large saucepan over medium heat. Fry ham and pineapple chunks until fragrant and lightly browned. Remove ingredients from pan and set aside.
  • In the same pan, melt butter over medium high. Add garlic and cinnamon. Fry until fragrant. Add in turmeric powder, curry powder, lemon juice, salt and sugar, mixing well. Add rice and fry for about a minute, mixing well. Add pineapple juice into pan. Add boiling water, turn stove to low, cover and leave rice to cook, about 20 minutes; adding more water if necessary.
  • Add pineapple chunks and ham; stir until heated through. Remove cinnamon stick. Optional - Garnish with fried shallots and sliced red chilies.

  1. Wow, this was delicious!!! And very yellow... Pineapple and ham are two of my favorite things, and this was a great new way to put this combination together. The garlic, cinnamon, turmeric, and curry were huge in flavor and in scent. Family enjoyed very much!!! Did not use the shallots or chili pepper, as we were too hungry to garnish!
     
  2. Leslie is right on all accounts. This is a delicious, flavorful meal with a long list of ingredients that is a snap to put together. To make clean-up easy on myself, I made this in my 5.5cup rice cooker. I just did steps 1 and the beginning of 2 with the lid open on the white rice setting, using it like a saucepan. Then once the hot water went in, I closed the lid and let it finish cooking. It was perfectly cooked, and there was just enough room left over to mix in the pineapple and ham! DD7 and Boogie Boy (almost 3) ate it without complaints, although I didn't mention the word curry until after they had each had some. :) Thank you for posting, this was yummy!   3. OMG, this rice is heavenly! I makes a terrific mix of sweet and heat in just the right amounts. Very, very easy to put together, which is another added bonus. I will make this again. I see it as a great recipe to use up left over ham after the Holidays, and it is certainly an easy, weeknight meal. Don't let the many ingredients put you off, it's easy-peasy! My whole family raved about this, thanks for posting! Made for ZWT 5 :)
     
  4. This was a good flavorful way to use up leftover ham. I made it as directed but with jasmine rice and less water. I also cut up sliced pineapple which is what I had on hand.
     
  5. OMG! This one's a sleeper! I fixed it with a spinach and strawberry salad, some crusty sourdough bread, and a nice bottle of Chardonnay! Great recipe Nif!!!
