New Potatoes With Dijon Vinaigrette

- 11 small red potatoes, scrubbed
- 2 tablespoons water

Dijon Vinaigrette
- 1⁄4 cup water
- 3 tablespoons rice wine or 3 tablespoons cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1⁄2 teaspoon dried dill weed
- 1 tablespoon chopped chives
directions
- MICROWAVE DIRECTIONS:.
- With potato peeler, remove strip of peel from around center of each potato.
- In 2-quart casserole, combine potatoes and 2 tablespoons water; cover tightly.
- Microwave on high 8 to 10 minutes or until tender, stirring once 1/2 way through cooking.
- Drain well.
- DIJON VINAIGRETTE:.
- In a small bowl, combine all vinaigrette ingredients; blend well.
- Pour over potatoes; toss to coat.
- Let stand 10 to 15 minutes or until serving time.
- Just before serving, toss potatoes again.
- Serve warm or at room temperature, spooning vinaigrette over potatoes.
- CONVENTIONAL DIRECTIONS:.
- With potato peeler, remove strip of peel from around center of each potato.
- Place potatoes in medium saucepan; add enough water to cover.
- Bring to a boil. Reduce heat to low; simmer 15 to 20 minutes or until tender.
- Drain well.
- Continue as directed above.

This was a lovely change from our normal potatoes. I also had to use small white potatoes because there weren't any red ones at our supermarket this week. I used my countertop electric steamer to steam the potatoes and then followed the directions as written. I am having to follow a low fat eating plan and so it was great to get so much taste without going nuts with the oil. My husband commented that they were good too and that is a rare thing for a non fried vegetable. Made for your win in the week 7 football pool.

This is wonderful and a true find for me. We had delicious potatoe's tonight that had very little fat but a lot of great flavor (Vic, even DH commented on how good the vinaigrette was all on his own!). I used very small Yukon Golds (each was about 2 bites) and the cider vinegar. I replaced the dill with Italian Herbs ('cause I hate dill). There was a lot of the vinaigrette which was a very good thing because I also spooned it over the asparagus and it brightened that up beautifully as well. Absolutely delicious and as a plus it's super simple to do. Thanks Vic.
