- 2 cups sugar
- 4 eggs
- 2 lbs pecans
- 2 teaspoons vanilla
- 2 cups flour
- 1 teaspoon baking powder
- 1 lb candied pineapple
- 1 lb candied cherry
- 1 lb candied date
directions
- Preheat oven to 350°F.
- Beat eggs, sugar and vanilla until frothy;
- Coat fruits with flour mixture (flour and baking powder).
- Add egg mixture.
- Line 2 loaf pans with wax paper and dump 1/2 mixture in each pan.
- Bake in oven for 1 hour.
