Ned's Pumpkin Bars

"I have 2 recipes that are just slightly different for pumpkin bars, and this is just one of them - they are so delicious, a great fall recipe. Instead of canned pumpkin you can use fresh cooked pumpkin - very good!!"

  • Combine egg, sugar pumpkin and butter. Add remaining ingredients and stir, Pour into a greased and floured jelly roll pan or if using only half the recipe, into a 9x13 inch pan. Bake 20-25 minutes at 325°F
  • ICING:.
  • Beat together and spread on cooled bars.
  • Cut into bars.

  1. These were good, but I was expecting a different texture. They were less like "bars" and more like cake, but good nonetheless. I used more cream cheese and less powdered sugar in the frosting though for more of a pumpkin-roll filling type taste.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
