Nacho Toad-In-The-Hole

"I've been craving some simple egg recipes and this one is simple and tasty!"

• Ingredients: 8
• Serves: 2

ingredients

• 2 slices whole wheat bread (or whole grain bread)
• 2 teaspoons olive oil
• 2 large eggs
• salt
• pepper
• 2 tablespoons finely shredded Mexican blend cheese
• 2 tablespoons black bean-corn salsa (or your favorite salsa)
• 1 tablespoon crushed tortilla chips

directions

1. Cut out the center of each bread slice, using a 3-inch round cutter(or use edge of a round glass; reserve cut-outs. Coat a large nonstick skillet lightly with oil.
2. Place bread slices and cut-outs in skillet.
3. Break and slip an egg into center of each bread slice. Turn on heat to medium-high.
4. Cook until whites are completely set and yolks begin to thicken but are not hard, 3 to 4 minutes. Carefully flip bread with egg and cut-outs over with turner.
5. Cook second side to desired doneness, 1 to 2 minutes.
6. Season with salt and pepper to taste.
7. Sprinkle 1 tbls. of Mexican cheese blend over each egg. Place a lid over skillet to allow cheese to melt for a minute.
8. Top each egg with 1 tbls. of salsa and distribute crushed tortilla chips evenly over top of both toasts.
9. Serve immediately and enjoy!

This is so good and so simple! I also didn't know what to do with the little cut-outs, so I ate them while I was preparing the recipe! This is a really easy and simple recipe for just about any time. Ok, I have to admit I was a bit skeptical about having crushed tortillas on my eggs, but the recipe turned out great. I did cut it in half to make just one serving. I used a homemade hot tomato salsa that I found at the grocery and used Mexican cheddar pepper jack cheese. I am a cheese lover, so next time I will add a bit more cheese. I think this would be good with a dollop of sour cream to top it off. The only thing the recipe did not tell me was what to do with the "cut out" after I had toasted it while cooking the egg. I just placed it on top of everything, like a little hat. Hopefully my pictures will be approved and you will be able to see the final creation.
