My Vegetable-Beef Soup

"I started making vegetable beef soup in 1970. An older lady who was our neighbor at the apartments where we lived gave me a few hints. She said she always added a splash of hot sauce and just a small amount of butter. I still do that. She used stew meat for her soup, but I could not afford that so I used hamburger meat, still do. You can use either tomato juice or V-8, I like both. Also, you can omit the pkg of dry onion soup mix, but I like the flavor. Only use one of the individual packages of soup mix."

  • Brown hamburger meat with the onions, drain fat.
  • Add tomato juice, then drained canned vegetables.
  • Add the rest of the ingredients and simmer for about 2 hours.
