this recipe sounds really good, have you ever tried a sweet potato instead of a rep potato?

This is a great dish. My husband and I really liked....couldn't get the kids to try it since it had zucchini and bell peppers. I ate the leftovers the next day over rice. Really tasty and healthy. Next time I going to try it in my solar oven.
