Muffins With Apples and Maple Syrup

- 2 apples
- 240 g flour
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 80 g walnuts, chopped
- 1 egg
- 80 ml oil
- 70 g sugar
- 1 pinch salt
- 120 ml maple syrup
- 160 g yoghurt
directions
- Cut apples in small cubes.
- In one bowl, mix together flour, baking powder, baking soda and nuts. In a second bowl, beat together the egg, oil, sugar, salt, sirup and yoghurt.
- Add flour-mixture and apples to the second bowl, mixing all ingredients.
- Fill in greased muffin tin.
- Bake at 190 degree Clsius for about 20 minutes.

Very good recipe. The maple syrup flavour is mild and delicate. I used eating apples, but I think sharp cooking apples would be better; I also peeled them (the recipe doesn't mention this). Half-way through the recipe, I realised that someone had eaten most of the maple syrup and that I only had 60ml left in the house! So I divided all the wet and dry mixes into two, then added maple syrup to one half and slightly diluted floral honey to the other half. I used paper muffin cases instead of greasing the tin. Both sets of six muffins turned out very well - light and moist, and very more-ish. Reviewed for Pick A Chef, Spring 2007.

Here is the right place for me!! I love to cook and am always looking for new recipes to try. I am married with an arab husband and we are a muslim family, so you will not find any pork or alcohol in my recipes. But I am quite sure, they are worth a try, as soon as I wil find the time to post them ;-)
