- 1⁄2 cup finely chopped shallot
- 1⁄2 cup finely chopped flat leaf parsley
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice (to taste)
- 1⁄2 teaspoon salt (to taste)
- 1⁄2 teaspoon pepper (to taste)
directions
- Combine all ingredients except salt and pepper in a bowl and toss to mix.
- Add salt and pepper and toss again.
- Best served within 2 hours of being made.
