ingredients
- 2 cups roast beef
- 1 cup gravy
- 1 teaspoon Worcestershire sauce
- 3 cups mashed potatoes
- 1 (8 ounce) can mushrooms
- 1 onion
- 1 cup cheddar cheese
directions
- Dice roast beef into cubes.
- Mix with gravy and Worcestershire sauce.
- Add mushrooms.
- Place in bottom of casserole.
- Mix half cup cheese into leftover potatoes.
- Place potatoes on top of casserole and sprinkle remaining cheese over casserole.
- Bake at 350 for 45 minutes.

What a wonderful dish to use up those leftovers! So easy and so tasty too. The only thing I changed was to use a teaspoon of dried chopped onions since I wasn't sure raw onion would get done in the time listed. I have just enough left for my lunch tomorrow and I'll be making the others jealous. Served with a green veggie and crusty bread, we were happy campers. Thanks for sharing this winner!

I actually made this last night making it a true Monday Night Special! Fast and easy. A great way to use up leftovers without having to add a bunch of extra ingredients. I made it in a 9x9 glass baking dish and it was quite full so I made sure the mashed potatoes were sealed well around the edges. Thanks for sharing. *Made for Fall Pac 2008*
