Mom's Yellow Squash Fritters

- 2 cups crookneck yellow squash, grated
- 1 medium onion, grated (optional)
- 3⁄4 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons oil
- 1 egg, beaten well
- 1 teaspoon baking powder
- 6 tablespoons all-purpose flour
- 3 tablespoons butter (for frying)
directions
- In a medium bowl, combine the squash, onion, salt, sugar, oil and beaten egg. Stir to blend.
- Combine the baking powder with the flour. Add to squash mixture and blend together until you do not see any flour.
- In a heavy skillet, over medium high, melt the butter.
- Drop spoonfuls of the squash batter into the hot butter. Watch carefully as you do when making pancakes. After a couple of minutes, carefully turn to lightly brown the other side.
- As you continue to fry the fritters, you may find that you need to add more butter to the pan and melt it before adding more spoonfuls of the squash batter.
- Cooking time denotes making the whole batch.
- Note: Add more sugar and flour if you desire.

The secret to this recipe is don't flip them and when you want to flip them still don't flip them if you want crispy...I added 3 more tablespoons flour ans 1/2 teaspoon baking powder and another tablespoon sugar. I boiled squash and mushed it and it was fine...make sure you get all the water out...mush in a strainer...I used chopped red onion only a half was plenty. They were delicious.

The good news first: these taste delicious! A small amount of sugar (and an added pinch of nutmeg) made for very delicious fritters. The bad news: the fritters fell apart and turned into goo. I followed the recipe to the letter and cannot figure out where I went wrong. A friend of mine tried this recipe, too and from all accounts she had no problems. Whatever did I do wrong this time around? I won't give up on the recipe as I am determined to solve the problem by hook or crookneck! I'll be back.

I just love reading recipes, dreaming how they will actually taste, and selecting those special recipes that prompt me to prepare them. The best part, though, is the thrill of cooking, relishing the delicious smells, and then comes the big event - tasting, eating, sharing, and making memories for loved ones! It gives me great pleasure to know that when I have family meals I am carrying on a tradition of all the women before me in our families. My mother,MIL, and grandmothers were excellent cooks. I have been blessed to have had the benefit of knowing other many wonderful friends and family members who prepared some pretty amazing meals in their kitchens. Did they share those recipes? Yes, they did! Well, maybe not all of them. If you had someone in your life who was a kitchen mentor, you will be able to retrieve your marvelous memories too! Because you love cooking as much as I do, in time I will be sharing recipes with you! I have so many cookbooks, but a favorite of mine is one I purchased in Ocean City, MD at the old Life Saving Station. It has several family members older recipes. My great grandmother's Oyster Stew is so dear to me as I didn't have any of her recipes. I have shared it as I have never come across any other like it. We really look forward to her oyster stew!
About rating recipes...I will never write a negative rating because all of us can have an off day; it's just like dining out at a favorite restaurant. Once in awhile my most favorite dish is not up to par but that doesn't mean I won't order it again. Let's just say I feel each individual rating is subjective.
