Mom's Cucumber Salad

This is the only cucumber salad I knew, until I ate at a friend's house when I was about 14! Mom and Grandma both made it this way...ok they used regular Miracle Whip, I use fat free.

ingredients
- 5 medium cucumbers, peeled and sliced
- 1 medium onion, diced
- 1 cup fat-free Miracle Whip
- 1 1⁄2 teaspoons prepared mustard
- 1 teaspoon sugar
- 1⁄8 teaspoon salt
- 1⁄8 teaspoon pepper
directions
- Place cucumbers and onions in large bowl. In a smaller bowl, mix remaining ingredients and pour over the cucumbers and onions. Chill in refrigerator for at least one hour. Serve. Salt, sugar, and pepper can be adjusted to your own taste, this is just the way I like it.

Miracle Whip is practically non-existent here so I followed another reviewers tip and used mayo with a little sugar and vinegar. Unfortunately we found the salad to be a little bland, it needed some more "zing". I did use hot mustard but still. Anyway, I did enjoy making it and sampling it. Thanks for posting. This was very tasty! Tasted a lot like potato salad minus the potatoes. I wanted more of a zing, so I added a small splash of vinegar and a small splash of dill pickle juice. It helped to make the sauce thinner. Very good. I also used celery salt instead of regular salt. Very good and so easy! Thanks for sharing.Reply
