  • Sift flour into bowl. Add corn meal, sugar, salt, and baking powder and mix well. Add shortening, eggs, and milk. Beat with a mixer until mixed well. Bake at 425 in a 9x9x2 pan for 12-15 minutes or until inserted knife comes out clean.

  1. This was a nice cornbread recipe, that I made into muffins. Thank you for sharing julestoo. My dh loved that they were not overly sweet and that it was a little gritty. The muffins were light and airy, crunchy on the outside and tender on the inside. These little muffins were very very fragile...treat them gently. Made for Spring Pac 2014.
