ingredients
- 1 cup boiling water
- 1 cup 100% bran
- 1 1⁄2 cups sugar
- 1⁄2 cup Crisco shortening
- 2 eggs
- 2 cups buttermilk
- 2 cups bran flakes
- 2 1⁄2 cups flour
- 2 1⁄2 teaspoons baking soda
- 1⁄2 teaspoon salt
- 1 cup mini chocolate chip
directions
- Pour boiling water over 100% bran in a small bowl.
- Beat sugar and shortening until creamy.
- Add eggs, buttermilk and bran flakes to sugar mixture.
- Mix well.
- Sift flour, baking soda and salt together. Blend into egg mixture.
- Stir in bran mixture.
- Spoon into tin cupcake wrappers.
- Bake at 400 for 15-18 minutes.
