  • Whisk all ingredients together in a bowl until smooth. (Batter should be the consistency of typical pancake batter. If too thick, add more milk).
  • Preheat an oiled pan on stove over medium-low heat.
  • Drop 1/4 cup batter onto hot pan and form into circles. ( I love to add blueberries at this point).
  • Cover and cook about 1-1/2 to 2 minutes, until bubbles start forming.
  • Flip and cook another 1-1/2 to 2 minutes until browned on the other side.
  • Repeat with the rest of the batter.
  • *makes 8 pancakes.

Tweaks

  1. If you whip the egg whites first separately and then fold them in to the other ingredients you'll get a lighter, fluffier result.
     
  2. I put 2 tablespoons oil in this and used a 1/2 cup in the Belgian waffle iron. It worked perfectly. It was a nice change to have waffles instead.
     
  3. They turned out well for what they are. When you present special diet foods they need the nutritional info so consumers know how to count a serving. The almond and coconut flavor are good but do not expect a fluffy pancake. They are heavier. One is filling. I made half into waffles.
