ingredients
- 1⁄2 cup butter (no substitutions)
- 1 cup firmly packed light brown sugar
- 1⁄4 cup milk
- 2 cups confectioners' sugar
directions
- On stovetop melt the butter, add the brown sugar and boil over low heat for two minutes, stirring constantly. Add the milk, stir until the mixture comes to a boil again. Remove from heat and allow to cool to about room temperature.
- Slowly beat in the confectioners sugar, using more or less sugar depending on the consistency desired. Beat until mixture is thick enough to spread.

I'll never again have to search for Butterscotch frostings ideas...This recipe is perfect as is & couldn't be simpler & has that "childhood Gramma" taste I crave...I recently found an "apple pie-cake" recipe that is SO good, & this frosting just takes it to another delicious level... BTW, sometimes i'll add a teaspoon of pure vanilla extract right after taking my pan off the heat... : )

This is the real deal for homemade butterscotch icing. There are no special ingredients - the butterscotch flavor simply comes from brown sugar as it was meant to. It was easy enough to make and had a nice texture. The flavor was good, although I wasn't prepared for how incredibly rich it was! I plan on making this again, next time using half brown sugar and half white to hopefully achieve a butterscotch-flavored icing that is delicious but not overwhelming.
