Molasses Peanut Butter Cookies

ingredients
- 1⁄2 cup shortening
- 1⁄2 cup peanut butter
- 1⁄2 cup sugar
- 1⁄2 cup molasses
- 1 teaspoon vanilla
- 1 egg, beaten
- 2 tablespoons milk
- 2 cups enriched flour
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon baking soda
- 1 teaspoon baking powder
directions
- Cream shortening and peanut butter. Add sugar gradually. Blend in Fancy Molasses, vanilla , beaten egg and milk. Stir in sifted dry ingredients. Drop onto greased cookie sheet and press down with the bottom of a glass covered with a damp cloth. Bake at 375F for 10 minutes.

So they're not the prettiest cookie. But for ease of preparation and taste, they're quite good! They took well to some (not all) whole wheat flour in the mix, and Splenda for a portion of the sugar. I did not add the milk, and they needed no longer than 7 minutes in the oven. I flattened some of them, and left some of them as "puffs." Got 44 cookies. For a low sugar cookie, they're a treat, and I'll eat them any day! Nice balance of molasses and peanut flavor. Happy I found this recipe!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
