Moist & Delicious Applesauce Cake

"This is based on a recipe from an old Junior Hospitality Club cookbook from Oklahoma City, where we lived in the mid-70's. I like to use whole wheat flour, and I don't think it needs frosting, it's already so moist and spicy. This batter can also be baked as cupcakes, and makes about 2 1/2 dozen. They should be baked for 25 to 30 minutes."

  • Preheat oven to 325 degrees F. Grease and flour tube pan.
  • Sift together dry ingredients and spices, set aside.
  • Cream together butter and sugar; add vanilla; beat in eggs one at a time.
  • Add dry ingredients, applesauce, raisins and nuts and stir to combine.
  • Pour batter into tube pan, spread evenly.
  • Bake in the center of the preheated oven for 45 to 50 minutes, until the center springs back when touched lightly, and a toothpick comes out clean.
  • This may be topped with cream cheese frosting if desired.
