Mocha Brownie Cookies With Coffee Frosting

"This recipe is from a Gooseberry Patch cookbook. They are absolutely wonderful. I actually use a little less cocoa in the frosting than it calls for, but feel free to adjust according to how chocolaty you like it."

directions

  • Combine all ingredients in order listed, mix well.
  • Drop by tbsp onto ungreased baking sheets.
  • Bake at 350°F for 10 minutes.
  • Cook and frost.
  • For frosting:

  • Combine first 3 ingredients.
  • Gradually blend in coffee until desired spreading consistency is reached.

  1. Sue! These are amazing! Absolutely delicious! My neighbor has been ehelping me bake this week, so it's really been cookie chaos! It's been a lot of fun. The frosting is unbelievable! My girlfriend, who's helping me bake, made one batch of these and I made another. But between our hubbys, they were flying off of the cooling racks faster than I could count!   2. How could I have almost forgotten to rate these? Very easily, that's how - out of sight (that is, devoured), out of mind! But my relatives and I adored these for a Friday night treat. I used vegan ingredients and the only thing I would add (and it might be just the veganization) is that they need to be flattened on the sheet. The ones I simply dropped took a very long time to bake and didn't spread that well. Second batch, pressed with a fork, came out more nicely. This is a keeper - iced cookies, imagine!   4. These are some exceptional cookies to survive my mistakes tonight! I have never had such a bad night as I have had tonight in nearly 40 years baking. I grabbed the wrong measuring spoon and added in 1&1/2 tsp. baking powder instead of 1 tsp. I think I can taste the baking powder but I doubt you really can. Then I went on to make the frosting. I was making it in the mixer and was just turning it off to add in the coffee and turned it to high instead. I had chocolatey, buttery sugar EVERYWHERE!! So I am not sure of ratio of coffee to other ingredients but I added enough for a nice spreading consistency. The frosting really does make the cookies special. I have 2 suggestions: use strong coffee and you may need to grease your cookie sheet, it worked much better for me when I did!! Thanks for the recipe. I will try this one again but start earlier in the day!
     
  5. These are really yummy! It took me a little longer to bake, but they came out great. I only did half of the frosting that that was plenty. The frosting is the best part!! I kept in all the cocoa as we love chocolate! Thanks, Coffeebarista!
