- 3 large russet potatoes, peeled and washed
- 1 large sweet potato, peeled and washed
- 2 pinches coarse sea salt
- 4 tablespoons butter
- 1⁄2 cup light sour cream (to taste)
- 1⁄4 cup heavy cream
- 1⁄2 teaspoon garlic salt (to taste)
- 1⁄2 teaspoon black pepper, to taste
- 2 large green onions
- 1 1⁄2 tablespoons parsley, chopped
directions
- Boil potatoes in salty water until tender, about 20 minutes. Drain and transfer back to the pot.
- Add butter and mash until well incorporated. Add sour cream, heavy cream, garlic salt and freshly ground black pepper; mash until mixed. Taste and adjust if necessary. Blend green onions in the potato mixture and sprinkle with fresh chopped parsley.
