Mississippi Mud Cookies
- Ready In:
- 2 cups sugar
- 1⁄2 cup evaporated milk
- 4 tablespoons cocoa
- 1⁄2 cup butter
- 1 teaspoon vanilla
- 2 1⁄2 cups quick-cooking oats
- Mix first 4 ingredients and bring to a ROLLING BOIL for 2 FULL MINUTES, stirring constantly.
- Remove from heat and add the last 2 ingredients.
- Spoon onto wax paper to cool.

The recipe should read: let cool!!! I couldn't wait, and was eating out of the pan, warm. Delicious just like that!!!!! This is between a 3 and a 4, but the taste won out. They never really harden (and the recipe says that), so that's a tiny problem, but they taste really good. I'm putting them in the fridge shortly, and that should work!! Thanks for afternoon snack.
